Preheat oven to 160 degrees Celsius. Line a muffin tray with baking paper. Beat eggs in a mixing bowl and set aside.

Grate the sweet potato. Saute the onion in a frying pan until soft and transparent, then add to egg mixture, along with the rest of the ingredients.

Mix with a fork to combine. Bake in muffin tray for 35 minutes until golden brown.
